Massaged Kale salad with Pine Nut Parmesan

serves 1 – me!

Massaged Kale and mixed greens salad

  • 1 cup kale leaves, torn
  • 1 cup lettuce leaves, torn
  • 1/4 cup basil leaves, torn
  • 2-3 tbsp fresh mint leaves, torn
  • 2-3 tbsp fresh cilantro
  • additional veggies of your choice (I added carrot and frozen peas)
  • 2 tbsp olive oil
  • juice of 1/2 lemon
  • 1/2 tsp sea salt
  • 1/2 tsp fresh grated pepper

Place kale, salt, and olive oil in a bowl.  With clean hands, begin to “massage” oil and salt into the kale leaves until the kale begins to wilt.  Toss with lettuce, herbs, veggies, pepper, lemon juice, and 2-3 tbsp Sesame Pine Nut Parmesan

Sesame Pine Nut Parmesan

makes 1/2 cup parmesan

  • 3 tbsp sesame seeds (I used roasted, use whatever you have)
  • 1 tsp pine nuts
  • 2 tsp flax seeds
  • 2 tsp nutritional yeast
  • zest of 1 lemon
  • 1/2 tsp salt

Pulse all ingredients together in a blender or food processor until the consistency of grated cheese or breadcrumbs is reached.  Sprinkle on everything!
