Creamy Summer Broccoli Soup

When I was a kid, one of my favorite things to eat was cream of broccoli soup, the kind my mom made from a box in the freezer.  Let me say right off the bat, this is nothing like that soup at all.  Oh, and I really recommend using a food processor or a real blender for this, if you have one.  It took s bit of maneuvering and shaking and quite a bit of blending to get this smooth in the Magic Bullet, and I also lightly steamed the broccoli for ease of blending.  If you’re using a food processor or blender, you can omit the steaming step.

serves 1 hungry person

  • 1 small bunch broccoli
  • 1 yellow bell pepper
  • 1/2 avocado
  • 2-3 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tbsp dried cilantro
  • 1/2 tsp fresh ground pepper
  • diced tomato, for garnish
  • water, to blend (begin with 1/4 cup and increase until desired consistency is reached)

If using a Magic Bullet, or if desired, set broccoli, finely chopped, in a steamer basket over boiling water for 5 minutes.  While broccoli is steaming, prepare the rest of your ingredients: Slice and clean your pepper, dice up the avocado.  Reserve some avocado for garnish.  When broccoli is done, put all ingredients in your food processor or blender, and process until creamy.  Pour into a bowl, garnish with remaining avocado, tomato, and extra black pepper.
